From the pork loin comes the Cuor di Lonza alle Erbette, a delicate cured meat that is particularly lean and free of allergens.

Expertly spicy, salted sparingly, tied by hand, it is seasoned in a mixture of natural herbs, which embellish its flavor. With its low salt content, it is an excellent cold cuts to be enjoyed alone or in combination with extra virgin olive oil, lemon and Parmigiano Reggiano flakes.
